The Colle di Tenna is a place historically suited to vine cultivation. Toward the end of the 1800s, on the steep slopes that fall rapidly toward Lake Caldonazzo, the first Chardonnay vines in Italy were planted for the production of sparkling wine bases. The climatic conditions, the characteristics of the soil, the lake breeze, and the excellent sun exposure made that intuition a perfect one.
More than a century later, the desire to rediscover that ancient and forgotten value lives again in a precious mountain sparkling wine, with unique and strongly distinctive characteristics.
A Metodo Classico Extra Brut made exclusively from Chardonnay grapes, belonging to a prestigious appellation — a guarantee of quality: Trentodoc, proudly stamped on my label.
Only Chardonnay grapes, hand-harvested on the steep calcareous slopes of the “Fontanaze” overlooking Lake Caldonazzo (perfect South/West exposure, about 450 m a.s.l.), and from the porphyritic soils of “Maso Serafini”, on the upper part of the Colle di Tenna (full sun exposure, about 650 m a.s.l.). After hand-harvesting, the mosto fiore (first-press must) is selected, and the cuvées are aged in stainless steel tanks until tirage. The refinement continues in bottle on the lees for 36 months.
The vocation of the soil, the sun exposure, the reflection of light on Lake Caldonazzo, and the breeze that keeps the grapes healthy are precious characteristics that enhance buttery notes, green apple, white flowers, and bread crust. The perlage is creamy, savory, with hints of pastry.
